White Bean Chicken Chili Crockpot Recipe


Serves: 6-8

Ingredients:
  • 1.5 pounds of chicken breasts
  • 1 teaspoon of chili powder 
  • 1 teaspoon of cumin 
  • 1/2 teaspoon garlic powder 
  • 14.5 ounces of chicken broth 
  • 4.5 ounce can of chopped green chiles (I used mild and only used half of the can)
  • 1/2 sweet onion, chopped
  • 15 ounce can of white corn, drained
  • 2 -15.5 ounce cans of white beans, drained (I used one can of Cannellini and one can of Navy)
  • 3 tablespoons of butter
  • 3 tablespoons of flour 
  • 1 cup of milk 
  • 1 teaspoon of Better Than Bullion chicken base
  • 1/2 teaspoon of salt 
  • 1/2 cup of sour cream 
  • 1/4 cup cilantro, chopped 
  • 1 cup of shredded cheese 
  • 1 bunch of green onions, chopped  
  • 1 lime 
Directions:
  1. Place your chicken breasts in the bottom of your crockpot and season with chili powder, cumin, and garlic powder.  Add the chicken broth, green chiles, onion, white corn and beans.  Cook on low for 6-8 hours. 
  2. An hour before serving: sin a saucepan, melt butter, whisk in flour and cook on medium heat allowing the mixture to brown a bit.  Slowly add milk and chicken base and simmer for 4-5 minutes until the sauce has thickened.  
  3. Pour the sauce into the crock pot, add the sour cream, and mix to combine. If the chicken is still whole, shred using two forks.  
  4. Allow the chili to cook for another hour. 
  5. Garnish chili with a dollop of sour cream, a pinch of chopped cilantro and green onions and a dash of fresh lime juice.

(The Best) Slow Cooker Pulled BBQ Chicken Sandwiches (Ever)


Best pulled BBQ chicken you will ever eat.  It's awesome.  Try it and let me know how much you love it! 

Ingredients:

  • 2 pounds of chicken breast 
  • 1 medium onion chopped
  • 2 clove of garlic minced  
  • 1 tablespoon of brown sugar
  • 1 tablespoon of paprika 
  • 1 tablespoon of Worcestershire sauce 
  • 1 teaspoon of liquid smoke 
  • 2 tablespoons of apple cider vinegar 
  • 1 cup of apple juice 
  • Salt and pepper to taste 
  • 1/2 cup of chicken stock 
  • 1 cup of your favorite BBQ sauce 
  • Kaiser rolls 
  • Coleslaw 
Directions:
  1. Place all of your ingredients in your slow cooker EXCEPT the chicken stock and BBQ sauce.
  2. Cook on low for 6-8 hours.  
  3. When the chicken is done cooking, add the chicken stock and BBQ sauce.  Shred the chicken and mix the chicken with the sauce and BBQ sauce.  
  4. Serve the pulled BBQ chicken on a kaiser roll topped with coleslaw.  
  5. Enjoy!

Cheddar Beer Lime Crock Pot Chicken






INGREDIENTS:
  • 2 lbs of chicken breasts 
  • 16 oz jar of salsa 
  • 3/4 cup of beer
  • 1/2 of an onion chopped 
  • juice of 2 limes 
  • 2 cloves of garlic minced 
  • 1 tsp cumin
  • 1 TBS chili powder
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • salt & pepper
  • 16 oz shredded cheddar cheese 
DIRECTIONS:
  1. Place all of your ingredients EXCEPT THE CHEESE in your crock pot, cover and cook on low for 8 hours  
  2. About an hour before your chicken is done, take two forks and shred your chicken recover.
  3. When the chicken is done, add the cheddar cheese and stir.
  4. Serve on a warm flour or corn tortilla with the toppings and sides of your choice.  I used sour cream, guacamole, and black beans for the toppings and served with cilantro lime brown basmati rice. 
  5. Enjoy!

I recently had a conversation with my best friend where she told me how busy she was and could not seem to get anything done.  Her house was suffering, she was exhausted, and most nights she just could not manage getting dinner on the table.   Sound familiar?  I asked her if she ever used her Crockpot, her response.... no....I said "No!? Girl....the crockpot is your FRIEND!! Use it!  And to make life even easier, prep your meal the night before (because seriously who has time to be prepping food during the morning kitchen rush hour).  Put everything in the crockpot, put it in the fridge and in the morning, pop it in turn it on and dinner is served!  This is one of my favorite lifesaving crockpot recipes.

Crock Pot Loaded Potato Soup

Ingredients:

  • 5 lbs potatoes cut into 1 inch cubes 
  • 1 large onion chopped
  • 5 garlic cloves minced
  • 32 oz chicken broth
  • 1 bay leaf
  • Salt 
  • Pepper
  • 1 cup cream
  • 16 oz cream cheese 
Toppings:
  • Shredded cheddar cheese
  • Sour cream 
  • Bacon
  • Chives

Directions: 
  1. Put first 7 ingredients into crock pot and cook on low for 10 hours, high for 6.
  2. Stir in cream and cream cheese until it is well mixed. 
  3. Slowly and carefully ladle your soup into a food processor, blender, or better yet use a submersible blender and blend your soup to the consistency of your liking. I like to blend half.
  4. Serve with toppings of your choice.
  5. Enjoy!!

Crock Pot Apple Butter Pork Loin



SERVES: 5-6
INGREDIENTS:
3-4 pound pork loin roast
1 tablespoon olive oil
2 cloves garlic minced
4 apples peeled, cored, and sliced
8 ounces of Baby Carrots
1/4 cup apple cider
1/4 cup brown sugar
1 teaspoon thyme
1/8 teaspoon dry mustard
1/4 teaspoon ground cinnamon
1/2 cup apple butter

DIRECTIONS:
1. Remove excess fat from pork loin.
2. In a large pan, heat olive oil. Season both sides of roast with salt and pepper and place in the heated pan. Cook until both sides are nice and brown.
3. Add garlic, carrots, apples and apple cider in the bottom of the crock pot
4. Place pork in crock pot and cover with the brown sugar, thyme, dry mustard, cinnamon and apple butter.
5. Set your Crock Pot on low and cook for 8 hours.
6. To serve, slice thin and plate. Scoop juices, apples and carrots from the crock pot and spread over the top of meat. Suggested sides: Sweet potatoes, mashed potatoes, rice.

Easiest Crock Pot Chicken Taco Meat EVER!

This was so easy I can't even stand it.  If you want a quick, stress free meal that your entire family will devour, this is it.

Ingredients:
  • 2 lbs boneless, skinless chicken breasts
  • 16oz jar of chunky salsa (I use mild so the children will eat it)
  • 1 pack of taco seasoning 
  • 1 large onion chopped
  • 3 cloves of garlic minced
  • Small flour tortillas 
Optional toppings:
  • tomato
  • sour cream
  • shredded lettuce
  • shredded jack and cheddar cheese

Directions:
  1. Throw it all in the crock pot (minus the tortillas!) set on high for 4-6 hours or low for 8-10. 
  2. About an hour before the time in the crock is done, shred the chicken using two forks.  This will be easy and the chicken will more than likely fall apart as you are shredding. 
  3. After you are done shredding, let the chicken hang out a bit in the juices.  If it seems a bit dry and you don't have much juice, add about 1/2 cup of water or chicken broth if you have it.  
  4. Done! Enjoy! 
I served these chicken tacos with cilantro-lime rice and Amy's refried beans.  YUM!!! Everyone was very happy.  I will update with a picture soon!

Crock Pot Falafel

I love, love, LOVE falafel but despise that it is deep fried.  Since I've been trying to lose my extra baby weight that I gained while pregnant with my "baby" (who is now 2 and a half) I've been looking for some healthier recipes and thought I would give this one a go.  This turned out better than I expected!


Eat, chow, Crock Pot, falafel

Ingredients:

  • 15oz can of garbanzo beans/chickpeas drained
  • 1/2 onion roughly chopped 
  • 1 Tablespoon fresh parsley 
  • 3 cloves garlic
  • 1 egg
  • 1 Tablespoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons cumin
  • 1 teaspoon coriander 
  • 1 lemon juiced 
  • 1 cup bread crumbs
  • olive oil spray for the bottom of the crock pot
  • plain greek yogurt
  • dill
Directions:
  1. Mash beans in a small bowl (I used a pastry blender because the fork wasn't cutting it)
  2. Add onion, parsley, garlic, egg, salt, pepper, cumin, coriander, and lemon into a blender or food processor and blend until mixed. 
  3. Pour mixture in with the beans, add bread crumbs and combine.  
  4. Spray the bottom of your crock pot liberally with the olive oil spray (or just pour about 2 tablespoons in)
  5. Make golfball sized falafel balls (like you would make a meatball) and flatten between the palms of your hands.  Place in the bottom of your pot. 
  6. Mix the plain greek yogurt with the dill, salt and pepper and refrigerate.
  7. Cook on high for about 4 hours or low for about 6.  These you will have to watch.
  8. To prepare, spoon yogurt into a pita, add lettuce, red onion and finally the falafel.
  9. Enjoy!
