INGREDIENTS:
- 1 tablespoon extra virgin olive oil
- 1 medium onion chopped
- 3-4 cloves of fresh garlic, minced
- 2 (32oz) cartons of chicken broth
- 7 oz can mild green chile's (chopped)
- 2 pounds chicken breasts
- 1 fresh lime juiced
- 1 cup packed cilantro, chopped
- 1 teaspoon salt (more or less depending on how much salt is in your broth)
- 1/4 teaspoon freshly ground black pepper
- 1 avocado, cubed
- 1 cup cheddar cheese, shredded
- Tortilla chips
- 2-3 cups cooked rice
DIRECTIONS:
- In a small pan saute onion and garlic
- Place onions, garlic, chicken broth, green chile's, chicken breasts, lime juice, cilantro, salt and pepper in crock pot.
- Set on low for 8 hours.
- Cook rice according to package (I use a rice cooker)
- Remove chicken and shred
- Add chicken and rice back into soup and mix well
- Ladle soup into bowls, top with shredded cheese, avocado and tortilla chips.
- Enjoy!
